Beecher's Cheese Pike Place Market

Beecher's was a surprise. As we walked past the windows we saw the huge vats of cheese being stirred and we were captured. A knowledgable young man let us taste many of the cheeses they carry but we came away with the 4 year old Cheddar. Exceptional with lots of crunchy calcified bits. I'd love to pit this against a Neal's Yard Dairy and Balderson cheddar for some real taste testing. Actually we probably will at the next TTG Friday Wine and Cheese.
